Making pasta is one of those things that I never thought that I would fall in love with. Now, unlike this recipe I do go for the easy way- yes I have a pasta maker attachment for our kitchen-aid . You can also buy or cut roll it out and cut as the instructions say. Honestly though- the attachment for the Kitchen-Aid is one of the best buys I’ve made (it makes making pierogi a breeze).
Homemade Noodles

Servings: 2 pounds
6 eggs 6 tablespoons light cream 1 teaspoon salt 4½ cups flour about
Combine eggs, cream, and salt.
Beat thoroughly.
Stir in flour gradually to form a dough that can be formed into a ball.
Knead on a lightly floured surface for 10 minutes.
Divide dough into 4 portions.
On a lightly floured surface roll each portion, stretching the dough, until paper-thin and transparent.
Let dry for 30 minutes.
Cut into strips of desired widths.
Drop into boiling salted water (½ pound or 2 cups noodles, 2 quarts water, 2 teaspoons salt) and cook for about 6 minutes.
Drain.
Yield: 2 pounds of uncooked noodles
AUNT DOROTHY'S LASAGNA.

3 lbs. round ground 1 box lasagna noodles 3 cans Suzabelle Pizza sauce 1 can can stewing tomatoes finely cut 1 large onion 2 pkg Mozzarella cheese 2 cartons cartons ricotta cheese 2 tsp. rounded oregano Parmesan cheese
Cook meat in oil with onion.
While meat is browning, open cans and combine in a large kettle.
Add meat and simmer for 30 minutes,
Cook lasagna noodles. Into the very large roasting pan, put 1 cup of sauce on the bottom.
Add lasagna strips, then the mixture, then 2 kinds of cheese.
Keep repeating.
The top layer has the mixture and cheese on top.
Sprinkle Parmesan cheese on top and a very faint sprinkle of oregano.
Bake in 350-degree oven 30- 40 minutes.
Let set for about 10 minutes before serving.

LENTEN LASAGNE
Lasagna recipe that is perfect for meat free Mondays or Fridays during lent

½ cup chopped onion 2 medium cloves garlic minced 1 teaspoon oregano crushed 2 tablespoons butter or margarine 2 cans 10 ¾ ounces each Campbell’s Tomato Soup ¼ cup water 8 ounces lasagne noodles cooked and drained 8 ounces Mozzarella cheese sliced 1 pint cottage or ricotta cheese . ¼ cup grated Parmesan cheese
In saucepan, cook onion with seasonings in butter
until tender; add soup, water.
In shallow baking dish (12"x8"x2"), arrange three.alternate layers of noodles, Mozzarella cheese, cottage cheese, sauce, and Parmesan cheese.
Bake at 350°F. for 30 minutes.
4 to 6 servings.

2 cups sugar 2 cups butter 4 tbsp anise seed 4 tbsp anise extract 5 cups flour (sifted twice) 3 tbsp bourbon 2 cups almonds or walnuts 6 eggs 1 tbsp baking powder
Mix sugar, butter, anise seed, anise extract, bourbon and nuts together.
Beat in eggs.
Sift flour twice, measure, add baking powder and sift again, adding to sugar mixture.
Blend thoroughly.
Cover and chill dough for 2-3 hours.
On a lightly floured board shape dough into flat loaves 1/2" thick, 2" wide and the length of your cookie sheet.
Place only 2 loaves per cookie sheet.
Bake in 375º F oven for about 20 minutes.
Remove from oven.and let cool to touch.
Slice diagonally in 1/2" slices
