Chocolate Ice Cream Cake aka Midcentury Modern food fun

The name of this recipe is so misleading- I expected for it to be an “ice cream cake”, not a chocolate cake with ice cream. This recipe can be tailored to your needs so easily. Want regular chocolate cake? Buy that mix. Need to go gluten-free? There is a mix for that. You can even make your own from scratch (see a list of cake recipes at the bottom of this post)

CHOCOLATE ICE CREAM CAKE

Ingredients

  • 1 package chocolate cake mix (along with ingredients on package)
  • 1 quart vanilla ice cream
  • 3 egg whites
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  • Bake cake, according to box directions, in a rectangular pan.
  • Cool and cut in half. (Save second half for another purpose.)
  • Place cake on waxed paper on a breadboard.
  • Set in freezer to chill.
  • Spoon ice cream over cake and chill until firm.
  • Beat whites until stiff adding a little salt and vanilla.
  • Add sugar gradually continuing to beat.
  • Spread over ice cream and place under heated broiler for a very few minutes to brown meringue.

Notes

This may be replaced in the freezer for a few minutes if it is necessary.

Cream Cheese Cookies

CREAM CHEESE COOKIES

Ingredients

  • cup butter
  • 9 oz cream cheese
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • cups flour
  • 2 teaspoons baking powder

Instructions

  • Thoroughly blend butter, cheese, sugar, and vanilla.
  • Gradually work in sifted dry ingredients.
  • Form into a roll and wrap in parchment paper or foil and chill overnight or until firm.
  • Slice thin and place on greased baking sheets.
  • Bake in a 425° oven for 8 to 10 minutes.
  • Cool on racks, then store in a tight container.

Christmas Bread

 

CHRISTMAS BREAD

Ingredients

  • 2 cups scalded milk
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 2 packages active dry yeast
  • 1/4 cup lukewarm water
  • 3 cups flour
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 2 teaspoons grated lemon peel
  • 1 cup chopped mixed candied peel
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 2 eggs beaten
  • 3/4 cup slivered blanched almonds
  • 2 cups white raisins
  • 3 to 4 cups flour

Instructions

  • Combine scalded milk, the tablespoon sugar, and salt.
  • Cool to lukewarm and add yeast dissolved in water.
  • Add 3 cups flour and beat thoroughly.
  • Set in a warm place until bubbly.
  • Cream shortening and sugar.
  • Add grated lemon peel, candied peel, vanilla, nutmeg and eggs.
  • Stir into bubbly mixture.
  • Add remaining ingredients and mix until dough is smooth and soft.
  • Let rest 10 minutes.
  • Knead until smooth and elastic.
  • Place in a greased bowl, cover with a damp cloth and let rise in a warm place until double in bulk.
  • Punch down.
  • Shape into 2 loaves and place in buttered loaf pans.
  • Let rise again until double in bulk,
  • Bake in a 350-degree oven for about an hour.
  • Turn to racks to cool.

Marble Angel Ring

 

Marble Angel Ring

Ingredients

  • 1/2 Cup Sugar
  • 1 Envelope Unflavored gelatin
  • 1/4 Tsp Salt
  • 1 1/4 Cups Milk
  • 2 Ounces Unsweetened chocolate
  • 3 Eggs Separated
  • 1 Tsp Vanilla
  • 1/4 Cup Sugar
  • 1 Cup Heavy cream Whipped
  • 10-10.5 Ounce Loaf angel food cake

Instructions

  • Mix sugar, salt and gelatin thoroughly.
  • Add milk and chocolate.
  • Heat and stir over low heat until chocolate melts and gelatin dissolves.
  • Gradually add small amount to beaten yolks, then combine both mixtures.
  • Add vanilla and chill, stirring occasionally until partially set.
  • Beat egg whites until soft peaks form.
  • Beat in sugar.
  • Fold in chocolate then whipped cream.
  • Remove brown crust from cake and tear cake into bite sized pieces.
  • Fold into chocolate mixture.
  • Turn into a 9” spring form pan or tube pan (line tube pan with foil)
  • Chill several hours or overnight.
  • Unmold
  • Trim with whipped cream and shaved chocolate.

Bourbon Rings

 

Bourbon Rings

Servings: 3 dozen

Ingredients

  • 2 1/2 cups flour
  • 1 cup butter
  • 1/2 cup sugar
  • 2 tbsp bourbon

Instructions

  • Combine all ingredients and work together to make a soft dough. Roll into thin ropes on a lightly floured surface.
  • Cut into 4" lengths. Carefully twist 2 lengths together, shape into a ring by pinching the ends together.
  • Bake on greased cook sheets in preheated 350º oven 12-15 minutes, until done and lightly browned,
