Violet Kozel’s Grandma’s Swedish Coffee Cake

1 large square yeast 1/2 cup water lukewarm 3 Tbsp butter 1/8 tsp salt 3/4 cup sugar 1 cup milk scalded 2 eggs beaten 15 cardamon seeds ground fine 4-4 1/2 cup flour sifted butter melted sugar Cinnamon
Dissolve yeast in water.
Set aside
Mix together butter, salt, sugar and scaled milk.
Let cool.
To the cool milk mixture add yeast, 2 beaten eggs, the cardamon seeds, & sifted flour.
Knead on floured board.
Let rise to top of bowl in warm place, about 2 hours.
Braid and shape into tearings or strips.
Place in greased baking tins for 25-30 minutes, on warm place, to allow to raise again.
Brush with melted butter, cinnamon, and sugar.
Bake 30-35 minutes at 350 degrees.
Makes two coffee cakes
I was trying to find something (anything) about this recipe fpr a Hawaiian Party Cake and there isn’t that much out there. I can find all sorts of cake decorating tips and tricks but only two websites with this style of cake. Is it authentic? Doubtful. I have a feeling that it came about as part of the Hawaii is an exotic place so add some pineapples. (Fun fact- most pineapples now come out of the Philippines, not Hawaii).
Hawaii Party Cake

1 yellow or lemon cake mix plus ingredients listed on package 1 pkg vanilla instant pudding 1 cup milk 8 oz soft cream cheese 2½ cup crushed pineapple coconut shredded or flaked chopped nuts maraschino cherry bits
Make & bake cake mix as directed on package.
Cool.
Beat together instant pudding with milk and cream cheese.
Spread this mixture on the cooled cake.
Drain liquid from the crushed pineapple and spread evenly over the pudding mixture.
Sprinkle with coconut, chopped nuts, and cherries.
Refrigerate.
Cheddar Pinwheels

1 cup butter 1 ⅓ cup flour ½ cup sour cream ¾ cup cheddar cheese shredded
Cut butter into flour thoroughly.
Blend in the sour cream and chill the dough.
When chilled, roll dough into a rectangle, sprinkle with cheese and roll up, starting from the long side.
Slice into ¼" slices and bake in 350° oven 20-25 minutes.
Optional: add shredded bacon
Note- shred the cheese yourself, don’t buy bagged shredded cheese. From A Taste of Home : “Pre-grated cheese contains preservatives like potato starch and natamycin, meant to keep the shreds from clumping together in the bag. That also means they don’t melt together as well when cooking.”
COOKIES FROM CAKE MIX

1 2-layer cake mix, any flavor ½ cup cooking oil 1 tablespoon water or milk 2 eggs chopped nuts, coconut or raisins optional
Add oil, water and eggs to half the cake mix; blend well.

Add remaining cake mix; blend well.

Drop by teaspoons onto greased cookie sheets and bake in 375° oven 10 to 15 minutes.
Add chopped nuts, coconut or raisins to the batter if you wish
Red Raspberry Puff

1½ cup Vanilla wafers crushed ¼ cup butter melted 2 Tbsp sugar 4 egg whites ½ cup sugar 2 cup sweetened red raspberries ½ cup heavy cream 2 tsp sugar
Mix crumbs, butter and 2 tbsp sugar.
Press in 8"x8"x2" pan
Beat egg whites until soft peaks are formed.
Beat in ½ cup sugar, 1 tbsp at a time.
Spread over crumb mixture.
Bake 325° until meringe is lightly browned, about 20 minutes.
Cool.
Cut into 9 squares.
Top with raspberries.
Whip cream then beat in 2 tsp sugar.
Spoon over raspberries.
