Spooned Tuna Cake

- 1 qt mashed potatoes
- 3 cans Chunks & Flakes or Fancy Tuna
- 6 eggs
- Pinch of nutmeg
- Salt
- pepper
Mix egg yolks with potato, and mix with drained tuna.
Whip whites of eggs stiff and fold gently into mixture; do not whip.
Season.
Dip mixture with a large spoon, drop info deep fat at frying temperature.
When cakes are puffed and brown, drain and serve.

SEASHORE SALAD

- 4 ounces shell macaroni
- ¾ cup canned salmon
- ½ cup celery diced
- ½ cup sweet pickle diced
- ¾ cup salad dressing (or mayo)
- Parsley
- watercress
Cook: macaroni in boiling; salted water until tender.
Drain and rinse in cold water.
While it drains again, flake salmon.
To the salmon, add the celery, pickle and 1/2 cup salad dressing.
Mix lightly.
Fold 1/4 cup salad dressing into macaroni.
Arrange alternating bands of macaroni and salmon salad on deep platter and chill.
Garnish with parsley and watercress,

Potato Pancakes

- 2 ½ c. grated raw potatoes
- 4 Tbsp. finely chopped onion
- 1 tsp. salt
- 3 Tbsp. fine dry breadcrumbs
- freshly ground black pepper to taste
- oil & butter
Peel and grate 3 large potatoes & press excess water out thoroughly.
Measure out 2 ½ cups of grated potatoes.
Stir in finely chopped onion, salt, 2 lightly beaten eggs, & bread crumbs
If batter still too moist, may add more bread crumbs.
Grate black pepper
Heat lg. heavy skillet & melt some butter in it
Add equal amount of salad oil.
Should be ¼" melted fat in skillet.
Drop pancake batter in by heaping spoonfuls & flatten slightly with back of spoon.
Fry pancake til crisp & brown on both sides.
Serve very hot with cold sour cream & applesauce.

Tuna Noodle Casserole

- 1 can cream of mushroom soup condensed
- 1/2 cup milk
- 2 cups cooked noodles
- 1 7oz can tuna drained and flaked
- 2 tbsp bread crumbs
Favorki without Egg Whites

- 6 egg yolk
- 1 cup sweet cream
- 2 cups flour
- 6 Tbsp sugar
- 1 jigger apricot brandy
Beat the egg yolks with sugar until light.
Add sweet cream and brandy.
Fold in enough flour to make a firm dough.
. Place the dough on a kneading board and roll out.
Cut into 2"x4" strips.
Cut a hole in the middle of each strip, then pass one end of the strip through it to make a knot.
Fry in hot lard until brown.
Sprinkle with powdered sugar.
Serve with honey.
